Ingredients:

12 Poblano chiles
3/4 Salt
Chihuahua cheese
1/2 Monterey Jack cheese

Instructions:

  1. Prepare the Crema Fresca:

    • Combine cream and sour cream in a bowl.
    • Cover and let it stand at room temperature until thickened, for about 8 hours or overnight.
    • Chill until ready to use.
  2. Prepare the Chili Peppers:

    • Char the poblano chiles over a gas flame until they are blackened on all sides.
    • Place the charred chiles in a plastic bag and let them stand for 10 minutes to steam.
    • Peel and core the chilies, then remove the seeds, rinse, and pat dry.
  3. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
  4. Prepare the Pie Pan:

    • Generously butter a 9-inch pie pan, preferably porcelain or stoneware, with 2-inch sides.
  5. Arrange the Chilies:

    • Open up the chili peppers and arrange them around the sides of the pie pan with the skin side down, pointing toward the center of the pan, and extending about 1/2 inch above the rim.
    • Cover the bottom of the pan with the remaining chilies.
  6. Prepare the Filling:

    • Finely grate the Chihuahua cheese, Monterey Jack cheese, onion, and garlic in a food processor using on/off pulses for about 30 seconds.
    • Add eggs and salt to the processor.
    • Process until smooth, stopping to scrape down the sides, for about 15 seconds.
    • Mix in the prepared Crema Fresca until well combined.
  7. Assemble the Pie:

    • Pour the filling over the chilies in the pie pan.
    • Gently curl the edges of the chilies over the filling.
  8. Bake the Pie:

    • Place the pie in the preheated oven and bake until golden brown and a knife inserted in the center comes out clean, for about 45 to 50 minutes.
    • If necessary, cover the edges of the chilies with foil to prevent burning.
  9. Cool and Serve:

    • Allow the pie to cool for 5 minutes before cutting.
    • Serve hot or at room temperature.
