- Combine cream and sour cream in a bowl.
- Cover and let it stand at room temperature until thickened, for about 8 hours or overnight.
- Chill until ready to use.

Prepare the Chili Peppers:
- Char the poblano chiles over a gas flame until they are blackened on all sides.
- Place the charred chiles in a plastic bag and let them stand for 10 minutes to steam.
- Peel and core the chilies, then remove the seeds, rinse, and pat dry.

Preheat the Oven:
- Preheat your oven to 350°F (175°C).

Prepare the Pie Pan:
- Generously butter a 9-inch pie pan, preferably porcelain or stoneware, with 2-inch sides.

Arrange the Chilies:
- Open up the chili peppers and arrange them around the sides of the pie pan with the skin side down, pointing toward the center of the pan, and extending about 1/2 inch above the rim.
