Songino (lamb’s lettuce) To taste

Instructions

  1. Prepare the aromatic oil:
    In a small saucepan, pour the extra virgin olive oil and heat it gently over low heat. Once slightly warmed, remove from the heat and add the garlic clove, cut in half, along with the finely chopped rosemary and fennel seeds. Use the flat side of a knife to lightly crush the fennel seeds, releasing their aromatic oils. Add a generous pinch of black pepper and stir to combine. Set aside to infuse the oil with the flavors.

  2. Prepare the toppings:
    While the oil is infusing, take the provolone and remove its rind. Cut the cheese into small, bite-sized cubes. Set aside.

  3. Assemble the schiacciate:
    Take each piece of “Schiacciata La Bottega di Olivia & Marino” and layer the bottom with a generous portion of cubed porchetta and provolone.

  4. Add freshness and seasoning:
