Caldo Verde Recipe

Ingredients:

Quantity Ingredient
2 tbsp Olive oil
2 1/2 Russet potatoes, thinly sliced
2 Yellow onions, chopped
1/2 tsp Crushed red pepper flakes
2 cloves Garlic, minced
6 cups Low sodium chicken broth
1/2 lb Pepperoni, sliced
4 cups Kale, stemmed and shredded
To taste Salt
1 tbsp Fresh lemon juice

Instructions:

  1. Prepare Potatoes: Peel potatoes and slice thinly, about 1/8″ thick.

  2. Saute Potatoes: Heat oil in a large stockpot over medium-high heat. Add potatoes and brown to give the soup a deep color and rich potato taste.

  3. Cook Onions: Add onions and red pepper flakes to the pot, and cook until onions turn soft.

  4. Add Garlic and Broth: Stir in garlic, then add broth and bring to a boil.

  5. Simmer: Reduce heat and simmer for 10-15 minutes until potatoes are cooked through.

  6. Prepare Pepperoni: Meanwhile, peel casing from pepperoni and slice into 1/4″-thick pieces. Heat a skillet over medium heat and add slices. Render and lightly brown on both sides, then drain on paper towels.

  7. Mash Potatoes: When potatoes are cooked, use a potato masher to mash them lightly, aiming to chunk them enough so the broth thickens but without turning them into a cream.

  8. Add Pepperoni: Add the drained pepperoni to the pot.

  9. Prepare Kale: In batches, stack stemmed kale and slice into shreds. Add to the pot and cook for 2-3 minutes.

  10. Season and Serve: Season with salt to taste. Just before serving, stir in lemon juice. Be cautious not to add the lemon juice too early, as it can turn the kale army-green.
