  • 1 teaspoon salt 🧂
  • 1/4 cup butter, melted 🧈

  • 3/4 cup sugar 🍚
  • 4 cups flour 🌾

📋 Instructions:

  1. Prepare the Potato:

    • Boil the potato until soft.
    • Save 1/4 cup of the water used to boil the potato and cool it to lukewarm.
  2. Mash the Potato:

    • Mash the boiled potato and measure out 1/2 cup.
  3. Activate the Yeast:

    • In the lukewarm potato water, add 2 tablespoons of sugar and the yeast. Stir to dissolve.
    • Stir in the mashed potato and set the mixture aside to double in bulk.
  4. Prepare the Milk:

    • Scald the milk, add salt, and cool it to lukewarm.
  5. Melted Butter:

    • Melt the butter and let it cool.
  6. Prepare the Egg Mixture:

    • In a large warm mixing bowl, beat the eggs. Set aside 1 tablespoon of eggs for brushing the tops of the loaves later.
  7. Combine Ingredients:

    • Gradually beat in sugar, then add melted butter.
    • Combine the egg and yeast mixtures. Blend thoroughly.
  8. Mix in Flour and Milk:

    • Add 1 1/3 cups of flour and 1/4 cup of milk. Beat until completely mixed.

  9. Knead the Dough:

    • Add the last 1 1/3 cups of flour and knead the dough until smooth and elastic, about 75 to 100 times.
  10. Rising Time:

    • Make a ball of dough, place it in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place. When double in bulk, punch it down.
  11. Shape the Loaves:

    • Divide the dough into 2 round balls and place them on 2 oiled pie pans or in oiled bread pans.
  12. Second Rise:

    • Allow the dough to double in bulk again, approximately 1 hour.
    • Preheat the oven to 350 degrees.
  13. Egg Wash and Bake:

    • Brush the tops of the loaves with the reserved beaten eggs.
    • Bake for 35-45 minutes or until brown and done. They may be frozen.
  14. Additional Tips:

    • Additional flour may be needed to achieve a soft dough.
    • The dough should be smooth, not sticky, after kneading is complete.
