Soto Daging Sapi, or Indonesian beef soup, is a hearty and aromatic dish that brings comfort and flavor in every spoonful. Ingredients:

  • Beef: 1/4 kg, cut into thin slices
  • Bean Sprouts: To taste
  • Cabbage: To taste
  • Celery: To taste
  • Fried Shallots: For garnish
  • Dry Spices:
    • 2 cloves
    • 1 cardamom pod
    • A small piece of nutmeg
    • A small piece of cassia bark
    • A small piece of cinnamon stick
    • 1 thumb-sized piece of turmeric
  • Ground Spices:
    • 8 cloves garlic
    • 4 candlenuts
  • Fresh Spices:
    • 1 stalk lemongrass
    • 2 bay leaves
    • 4 kaffir lime leaves
    • 2 slices ginger
    • 1 thumb-sized piece of galangal
  • Scallions: To taste
  • Water: 2 liters
  • Salt: To taste
  • Pepper: To taste
  • Cooking Oil: 1 tablespoon (for frying the spices)

Instructions:

  1. Prepare the Beef:

    • Rinse the beef thoroughly. Boil it in boiling water for 5 minutes to clean and then rinse again. Slice the beef into thin pieces, suitable for soto.
  2. Prepare the Spices:

    • Fry the turmeric and candlenuts in a pan with a bit of oil until fragrant. Once cooled, grind them together with the garlic into a smooth paste.
    • Fry the dry spices (cloves, cardamom, nutmeg, cassia bark, and cinnamon stick) briefly in a pan with a little oil until aromatic. Set aside.
  3. Assemble the Soup:

    • In the pressure cooker, add 2 liters of water, the sliced beef, fried dry spices, the ground spice paste, and fresh spices (lemongrass, bay leaves, kaffir lime leaves, ginger, and galangal). Season with a pinch of salt and pepper.
    • Seal the pressure cooker and cook for 20 minutes on high pressure.
  4. Prepare the Vegetables:

    • Wash the cabbage and bean sprouts. Soak them briefly in hot water to soften, then drain.
  5. Final Touches:

    • After 20 minutes, carefully release the pressure and open the cooker. Taste the broth and adjust the seasoning with more salt and pepper if needed.
    • Add the cabbage and bean sprouts to the soup. Cook briefly until the vegetables are tender.
