Star Anise 2 pieces
Carrot (Gajjar) 1 (sliced)
Onion 1 (chopped)
Ginger 1-inch piece (finely chopped)
Garlic 2 cloves (finely chopped)
Turmeric Powder (Haldi) 1/4 teaspoon
Cumin Powder (Jeera) 1/4 teaspoon
Italian Seasoning 1/4 teaspoon
Dill Leaves For garnish
Extra Virgin Olive Oil 1 teaspoon
Salt To taste
Pepper To taste

Preparation Time: 480 minutes (Soaking Time for Horse Gram)

Cooking Time: 30 minutes


Instructions

  1. Cook the Horse Gram:
    Begin by cooking the horse gram (kollu/kulith) in a pressure cooker along with 1 cup of water. Allow it to cook for about 4 to 5 whistles. Once done, switch off the heat and let the pressure release naturally. Set the cooked horse gram aside for later use.

  2. Prepare the Paneer:
    Cut the paneer into long strips or small cubes, depending on your preference. Heat a shallow pan over medium heat, add a teaspoon of extra virgin olive oil, and fry the paneer for about a minute until it turns golden. Set the fried paneer aside.

  3. Prepare the Soup Base:
    In a soup pot or handi, heat another teaspoon of olive oil over medium heat. Add the chopped onion, ginger, and garlic. Sauté until the raw smell of ginger and garlic disappears and the onion becomes translucent.

  4. Add Spices:
    Stir in the turmeric powder, cumin powder, and Italian seasoning. Sauté these spices along with the onions until they are well combined and fragrant.

  5. Add Liquid:
    Pour in the vegetable stock (or water) and bring it to a boil over medium-high heat. Stir to combine.

  6. Add Vegetables:
    Once the stock is boiling, add the star anise, cauliflower, carrot, and salt. Cook for about 5 minutes on high heat, or until the vegetables start to soften.

  7. Finish the Soup:
    Add the broccoli florets, cooked horse gram, and the fried paneer cubes to the pot. Simmer the soup for another 2 minutes, allowing the flavors to meld together. Check the seasoning, adding more salt or pepper if necessary.

  8. Serve:
