Instructions:
Preparation of Cheedai:
- Roast 2 cups of plain rice in a dry pan until fragrant, then sieve it coarsely.
- Separately roast 1/2 cup of urad dal and powder it finely.
- Combine the roasted rice and dal mixture with required salt, hing, and chili powder, mixing well with half a cup of butter. Optionally, add 1 cup of freshly grated coconut.
- Gradually add enough water to form a firm dough.
- Shape the dough into small, peanut-sized balls and set aside on a clean muslin cloth.
- Heat oil for deep frying and fry the rice balls in batches until golden brown.
- Drain the fried cheedai on paper towels. They are now ready to eat.
Preparation of Varavarisi:
- Soak kabuli chana, dry peas, whole moong dal, puff beans, English beans, and black sesame seeds separately overnight.
- Thoroughly wash and clean the soaked pulses.
- Drain the pulses and spread them out separately on a clean muslin cloth to dry.
- In a wok, fry the dried pulses separately until crisp.
- Meanwhile, fry the peanuts over low heat and remove the skins.
- Once all the pulses are fried and peanuts are skinless, combine them in a large bowl.
- Add the required chili powder, salt, and hing to the bowl and mix well.
- Spread the mixture evenly on a clean surface and allow it to sun-dry for 1 hour.
- Once dried, Varavarisi can be stored in an airtight container for up to a month.
