Description:
The combination might sound a bit strange, but this is a delicious Asian-style dumpling using a classic combination… especially good when served with my soy-ginger dipping sauce! Chef Sandy Patterson brings you a unique twist on traditional dumplings.
Ingredients:
- 1 lb ground pork
- 10 prunes, finely chopped
- 1 spring onion, finely chopped
- 2 tablespoons sake
- 1/2 teaspoon salt
- 1/8 teaspoon crushed red pepper flakes
- Wonton skins
Instructions:

Combine Ingredients: In a mixing bowl, combine the ground pork, finely chopped prunes, spring onion, sake, salt, and crushed red pepper flakes. Mix thoroughly until all ingredients are well incorporated. 🍖🥢

Prepare Dumplings: Take approximately 1 tablespoon of the filling mixture and place it in the center of a wonton skin. Moisten the edges of the skin with water, then fold it over the filling to create a half-moon shape. Press the edges firmly to seal, ensuring no filling escapes. Repeat this process until all the filling is used.

Steam or Pan-Fry: You have two delicious options for cooking your dumplings.

Steaming: Arrange the dumplings on a steaming rack or in a bamboo steamer, ensuring they are not touching each other. Steam for about 10 minutes or until the dumplings are cooked through and the wrappers are translucent.

Pan-Frying: Heat a non-stick skillet over medium heat and add a small amount of oil. Place the dumplings in the skillet, ensuring they are not overcrowded. Cook for 2-3 minutes until the bottoms are golden brown. Then, add water to the skillet, cover, and steam for an additional 4-5 minutes, or until the filling is cooked through.

Serve: Once cooked, transfer the dumplings to a serving plate. Serve hot with your favorite dipping sauce or Chef Sandy Patterson’s soy-ginger dipping sauce for an extra burst of flavor. 🌶️🥟

Recipe Notes:
- These dumplings freeze well! Simply arrange them on a baking sheet lined with parchment paper and place them in the freezer until solid. Once frozen, transfer them to a sealed container or freezer bag. They can be cooked directly from frozen, just allow a few extra minutes for steaming or pan-frying.
- Experiment with different dipping sauces to find your favorite pairing. Sweet chili sauce, garlic chili oil, or a traditional soy sauce and vinegar mix are all excellent choices.
