Fresh Broad Beans 100g
Bacon (or Pancetta) 100g
Pecorino Cheese 50g
Extra Virgin Olive Oil q.b.
Fine Salt q.b.
Black Pepper q.b.

Instructions:

  1. Prepare the Broad Beans: Begin by shelling the fresh broad beans. Afterward, remove the thin skin that envelops each bean. This can be done by gently pressing the beans between your fingers. Once peeled, place the beans in a small bowl and season them with extra virgin olive oil, salt, and black pepper to taste.

    Tip: If fresh broad beans are unavailable, dried beans can be used as an alternative. Simply soak them for at least 12 hours and cook them for around 2 hours until soft and tender.

  2. Cook the Bacon/Pancetta: Cut the bacon or pancetta into thin strips. Heat a pan over medium-high heat and add the strips, frying them for a few minutes until they turn crispy and golden.

  3. Prepare the Pecorino: While the bacon cooks, grate the pecorino cheese into small shavings using a fine grater.

  4. Assemble the Puff Pastries: Once the bacon has been cooked to a crispy texture, turn off the heat and begin assembling the puff pastries. Place a teaspoon of the seasoned broad beans onto each pastry sheet, followed by one or two strips of the crispy bacon. To help with the placement, use kitchen tongs to handle the bacon strips.

  5. Serve and Enjoy: Once all the pastries are assembled, they can be served immediately or slightly warmed. These classic puff pastries are a perfect appetizer for any occasion, offering a delightful blend of fresh flavors, savory bacon, and the richness of pecorino.
