Ingredients:

Pumpkin puree 1 cup

Instructions:

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a cookie sheet with cooking spray or butter.

  2. In a large mixing bowl, cream together the butter, brown sugar, and white sugar until creamy and well combined.

  3. Add the pumpkin puree, egg, and vanilla extract to the mixture, and mix until smooth and thoroughly incorporated.

  4. Sift in the all-purpose flour, baking soda, baking powder, ground cinnamon, ground allspice, and ground nutmeg. Stir until the dry ingredients are just combined with the wet ingredients.

  5. Gently fold in the chocolate chips until evenly distributed throughout the cookie dough.

  6. Using a tablespoon, drop spoonfuls of the dough onto the prepared cookie sheet, ensuring each cookie is about 4-5 inches in diameter and leaving approximately 2 inches of space between each cookie.
