Preparation Time:

10 minutes

Cooking Time:

45 minutes

Instructions

  1. Prepare the Moth Beans:
Begin by soaking the moth beans (matki) overnight. This will soften the beans, making them perfect for cooking the dal.

  2. Cook the Dal:
Heat a pressure cooker on medium heat. Add the oil to the cooker and let it warm up. Once the oil is hot, add the cumin seeds (jeera) and allow them to crackle, releasing their aromatic fragrance.

  3. Saute the Aromatics:
Add the chopped ginger and garlic to the pressure cooker and sauté for a few minutes until they become soft and fragrant.

  4. Cook the Onions:
Add the chopped onions to the cooker and sauté them well until they turn translucent and tender.

  5. Add the Tomatoes and Spices:
Next, stir in the chopped tomatoes along with a pinch of salt. Cook until the tomatoes become mushy and blend seamlessly into the mixture. Then, add all the spice powders — amchur (dry mango powder), garam masala powder, red chilli powder, and turmeric powder (haldi). Stir well to incorporate the spices into the mixture.

  6. Add the Moth Beans:
Add the soaked moth beans (matki) into the cooker. Pour in about 2 cups of water, making sure the beans are well-covered. Adjust the salt according to your taste preferences.

  7. Pressure Cook the Dal:
Close the lid of the pressure cooker and cook the dal on medium heat for about 4 whistles. Once done, turn off the heat and let the pressure release naturally.

  8. Garnish and Serve:
Once the pressure has released, carefully open the lid and give the dal a gentle stir. Transfer the dal to a serving bowl. Garnish with freshly chopped green chilli and sliced ginger for a burst of freshness.
