Simple Black Pepper Chicken (Ayam Lada Hitam Simple)

Ingredients

  • 200 grams boneless chicken, diced
  • 1 onion, thinly sliced
  • 4 cloves garlic, finely chopped
  • 2 large green chilies, sliced diagonally
  • 2 red chilies (or red bird’s eye chilies), sliced diagonally
  • 1/2 teaspoon oyster sauce
  • 1 teaspoon black pepper sauce
  • 1 teaspoon sweet soy sauce
  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Sauté Aromatics:
    In a large skillet or wok, heat a bit of oil over medium heat. Add the chopped garlic and sliced onions, sautéing until they become fragrant and the onions are translucent.

  2. Cook the Chicken:
    Add the diced chicken to the skillet. Cook, stirring occasionally, until the chicken pieces turn white and are no longer pink in the center.

  3. Simmer the Chicken:
    Add 5 tablespoons of water to the skillet. Cover the skillet and reduce the heat to low. Let the chicken simmer for about 10 minutes, allowing it to become tender.

  4. Add the Chilies and Sauces:
    Once the chicken is tender, add the sliced green and red chilies to the skillet. Stir in the oyster sauce, black pepper sauce, salt, and ground black pepper. Mix everything well to ensure the chicken is evenly coated with the sauces.

  5. Let the Flavors Marinate:
    Cover the skillet again and let it cook for another 5 minutes, allowing the flavors to meld and the chilies to soften.

  6. Adjust Seasoning and Serve:
    Finally, taste the dish and adjust the seasoning if needed. Once the flavors are well-balanced, let the chicken sit for an additional 5 minutes off the heat. Serve the dish hot with steamed rice.
