You can’t beat making soup start to finish in 10 minutes. This is easy, with no peeling required, and it’s very quick, making it a great main meal or snack! And you don’t cook out all the vitamins because it’s not simmering on the stove for hours. Clean up is a breeze, just the Vita-Mix. Ingredients:

| 2 | hot water |
| 1 | green onion |
| 1/4 | green pepper |
| 1/3 | zucchini |
| 1/3 | cheddar cheese |
| 1 | chicken bouillon cube |
| 1 | carrot |
| 1 | celery |
| 1 | roma tomatoes |
| 2 | serrano chili |
| 1/3 | cumin |
| 1 | garlic clove |
| 1 | cooked brown rice |
| 1 | black olives |
| 1 -3 | black beans |
| 1 -3 | corn |
| 4 -6 | tortillas |
| 3 | boneless chicken breasts |
Instructions:

First, blend the first 14 ingredients at high speed in the Vita-Mix for 4-5 minutes. No need to peel any of the veggies, you can even leave the skin of the garlic on.

Then, add the last 6 ingredients and blend for 5-10 seconds on #1 variable speed.
