Instructions

  1. Prepare the Tomato Base:
    In a 6-quart pot, combine the chopped red pear tomatoes, stewed tomatoes, and tomato sauce. Stir everything together and heat over medium heat until it’s almost boiling.

  2. Sauté the Vegetables and Shrimp:
    While the tomato mixture is heating, take a large cast-iron skillet and heat the olive oil over medium-high heat. Add the minced garlic and sauté for a minute, followed by the chopped onions. Cook until the onions become soft and translucent.

  3. Add the Shrimp:
    Once the onions are tender, remove them from the pan using a slotted spoon, but leave the oil behind in the skillet. Next, add the shrimp to the pan, lightly seasoning them with salt, pepper, and paprika. Cook the shrimp for about 5 minutes until they are pink and opaque, then remove them with the slotted spoon and add them to the tomato mixture.

  4. Cook the Chicken:
    In the same skillet, add the chicken chunks, seasoning them with salt, pepper, and paprika. Sauté for 8 minutes, or until the chicken is thoroughly cooked and browned on all sides. Remove the chicken with the slotted spoon and add it to the tomato mixture.

  5. Sauté the Zucchini:
    Finally, sauté the zucchini in the skillet for about 5 minutes until just tender, and then add it to the tomato mixture. Stir everything together and let it simmer for a couple of minutes to allow the flavors to meld.

  6. Serve:
    Ladle the mixture into large soup bowls and serve hot with a side of garlic bread for dunking. The rich tomato sauce, paired with the shrimp, chicken, and zucchini, will surely be a hit with your family and friends!
