Quick Mie Ayam Recipe

Ingredients:

For the Noodles:

  • 10 pieces of small bird’s nest noodles (approximately 250 grams)
  • 250 grams chicken breast or thigh

For the Chicken Seasoning:

  • 4 cloves garlic
  • 2 shallots
  • 2 candlenuts
  • 2 large red chilies
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon chicken bouillon powder
  • Salt to taste
  • Sweet soy sauce to taste

For the Pickles:

  • 2 small cucumbers
  • 4 small bird’s eye chilies
  • 1/2 teaspoon sugar
  • A pinch of salt
  • Vinegar to taste

For the Broth:

  • 100 grams chicken bones (or chicken feet)
  • 2 cups water (500 ml)
  • 1 teaspoon chicken bouillon powder
  • Salt to taste

Instructions:

  1. Prepare the Shredded Chicken:

    • Boil the chicken in water until cooked through and tender. Once done, drain the chicken and cool it down quickly by rinsing it under cold water. Shred or cut the chicken into bite-sized pieces according to your preference.
    • Grind the garlic, shallots, candlenuts, and red chilies into a smooth paste.
    • Heat some oil in a pan, sauté the ground spice paste until aromatic, then add the shredded chicken. Season with sweet soy sauce and adjust the taste with salt. Set aside.
  2. Prepare the Pickles:

    • Cut the cucumbers into small cubes or dice them according to your preference. Slice the bird’s eye chilies thinly.
    • Combine the cucumbers and chilies in a bowl. Add salt, sugar, and vinegar, then mix well until the cucumbers start to release some liquid. Adjust the taste to your liking.
  3. Prepare the Broth:

    • Bring the water to a boil, then add the chicken bones or chicken feet. Simmer until the broth is flavorful. Add the chicken bouillon powder and salt to taste. Adjust seasoning as needed.
  4. Cook the Noodles:

    • Cook the noodles according to the package instructions, ensuring they are cooked through but not overdone. Drain well.
  5. Assemble the Dish:

    • Place the cooked noodles into bowls. Pour the hot broth over the noodles, then top with the seasoned shredded chicken. Add a generous drizzle of sweet soy sauce. Garnish with pickles and serve with sambal on the side for extra heat.

Notes:

  • In this recipe, no additional seasonings are added to the noodles as they are already flavorful on their own.
