Stir-Fried Caisim with Egg (Tumis Ca Caisim + Telor)

Ingredients:

  • 1 bunch of caisim (Chinese mustard greens)
  • 1 egg
  • 3 shallots
  • 2 cloves of garlic
  • 3 red chilies
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon additional salt (optional)
  • Seasoning to taste (optional)
  • 1 tablespoon cooking oil

Instructions:

  1. Begin by thoroughly washing the caisim. Cut it into bite-sized pieces according to your preference.

  2. Finely chop the shallots, garlic, and red chilies.

  3. Heat the cooking oil in a skillet or wok over medium heat. Crack the egg into the skillet and scramble it until fully cooked. Push the scrambled egg to one side of the skillet.

  4. In the same skillet, add the chopped shallots and garlic. Sauté until they become fragrant and slightly golden.

  5. Add the chopped red chilies to the skillet. Continue to cook for another minute, allowing the flavors to meld together.

  6. Season with salt, ground black pepper, and any additional salt if desired. Stir well to combine.

  7. Add the caisim to the skillet. Stir-fry the caisim, mixing it with the other ingredients. If the mixture seems too dry, add a splash of water to help the vegetables cook evenly.

  8. Taste and adjust the seasoning if needed. You can add a pinch of sugar and seasoning to taste if desired.

  9. Serve hot as a flavorful and nutritious side dish or light main course.
