Asafoetida (Hing) 1/4 teaspoon

Turmeric Powder (Haldi) 1/4 teaspoon
Coriander Powder (Dhania) 1/2 teaspoon
Cumin Powder (Jeera) 1/2 teaspoon
Coriander Leaves (Dhania) 4 sprigs, chopped

  1. Prepare the Pan: Begin by heating oil in a broad non-stick pan over medium heat. Once the oil is hot, add the dry red chilli and mustard seeds. Let the mustard seeds crackle and release their aroma.

  2. Add Aromatics: Next, add cumin seeds (jeera), finely chopped green chilli, and asafoetida (hing). Stir everything together for a minute until the spices are well blended and fragrant.

  3. Cook the Sweet Potatoes: Add the sliced sweet potatoes to the pan and toss gently to coat with the spices. Let the sweet potatoes sauté for about 5 minutes, allowing them to soften slightly.

  4. Season and Cook: Sprinkle in salt and turmeric powder, then continue sautéing the sweet potatoes for an additional 10-15 minutes, or until they are fully cooked and tender. Stir occasionally to ensure the sweet potatoes are evenly cooked and coated with the spices.

  5. Add Final Spices: Once the sweet potatoes are cooked through, add coriander powder (dhania) and cumin powder (jeera) to the pan. Mix everything well to combine the spices and allow the flavors to meld for a couple of minutes.
