Ayam Kecap Simple Recipe

This delightful Indonesian dish, Ayam Kecap, combines tender chicken with a savory-sweet sauce. Perfect for a comforting meal with steamed rice.

Ingredients:

  • 1/2 chicken, cut into pieces
  • Salt, for seasoning
  • 1/2 onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1 stalk green onion, cut into small pieces or sliced lengthwise
  • 1 large green chili, seeds removed, sliced lengthwise
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 1 teaspoon soy sauce (kecap asin)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 100 ml water
  • Cooking oil, for frying

Instructions:

  1. Prepare the Chicken: Season the chicken pieces with salt and boil in water for about 15 minutes until cooked. Remove from water and set aside.

  2. Fry the Chicken: Heat a generous amount of cooking oil in a pan over medium heat. Fry the boiled chicken pieces until the skin turns golden and crispy. Remove the chicken and drain on paper towels.

  3. Cook the Aromatics: In the same pan, heat 2 tablespoons of cooking oil over medium heat. Add the sliced garlic and onion, sautéing until they become fragrant and translucent.

  4. Create the Sauce: Add the sweet soy sauce (kecap manis), soy sauce (kecap asin), salt, and ground black pepper to the pan. Stir well to combine and let the flavors meld together.

  5. Combine Chicken and Sauce: Return the fried chicken pieces to the pan. Pour in 100 ml of water, and add the green chili and green onion. Stir everything together and let it cook until the sauce thickens slightly and is absorbed by the chicken, about 5-7 minutes.

  6. Serve: Once the sauce has reduced and the chicken is well-coated, remove from heat. Serve the Ayam Kecap hot with steamed rice for a complete meal.
