Instructions

  1. Brown the Ground Beef:

    • In a large skillet, brown the ground beef over medium heat, breaking it up into small crumbles as it cooks.
  2. Drain and Season:

    • Drain the excess fat if necessary, and return the ground beef to the skillet. Add the chopped onion, oregano, and chili powder. Cook until the onions are soft and translucent.
  3. Prepare the Beef Strips:

    • In a separate large pot, heat the olive oil over medium-high heat. Add the beef strips and cook until they are browned on all sides.
  4. Combine Meats:

    • Add the cooked ground beef mixture to the pot with the beef strips, stirring to combine.
  5. Add Beans (Optional):

    • If using, drain the kidney beans and add them to the pot. Stir to incorporate.
  6. Add Tomatoes:

    • Drain one can of diced tomatoes with mild green chilies and add both the drained and undrained cans to the pot. Stir well to mix.
  7. Mix in Chili Seasoning:

    • Add the package of French’s Chili mix to the pot, stirring until the seasoning is evenly distributed.
  8. Simmer:

    • Reduce the heat to medium-low and let the chili simmer for about 10 minutes, allowing the flavors to meld together.
  9. Serve:

    • Spoon the chili into bowls and top each serving with a generous handful of shredded cheddar cheese.
