Ingredients

  • 1 onion (peeled and sliced)
  • 1 to 2 tablespoons curry powder
  • 2 tablespoons butter
  • 1 apple (peeled and sliced)

  • 1 cup desiccated coconut
  • 2 tablespoons fruit chutney
  • 3 tablespoons flour
  • 1Β½ pounds shoulder lamb chops (cut into chunks)
  • 800 ml beef stock (or as needed)
  • Salt and pepper to taste

Instructions

For Microwave Cooking:

  1. Prepare the Onion: Peel and slice the onion and place it in a large, flat microwave-safe dish.
  2. Combine Ingredients: Mix the curry powder and butter with the onion in the dish.
  3. Microwave the Base: Cover the dish and microwave on high power for 4 minutes.
  4. Prepare the Fruits: Peel and slice the apple and banana.
  5. Mix in the Fruits: Add the apple and banana slices, currants, desiccated coconut, fruit chutney, and flour to the onion mixture. Stir well to combine.
  6. Add Meat and Stock: Incorporate the lamb chunks and beef stock into the mixture. Stir to ensure even distribution.
