Tindora Sambharo (Gujarati-style Pickle)

Ingredients:
- 1 cup tindora, finely chopped
- 1 tsp red chili powder
- 1/4 tsp fenugreek seeds
- 1/2 tsp mustard seeds
- 1/4 tsp asafoetida
- 1 tbsp oil
- 1 lemon, juiced
- 1/4 tsp turmeric powder
- Salt, to taste
- 1/2 carrot, grated
- 1/2 green capsicum, chopped

Instructions:
- Begin by preparing the ingredients. Finely chop the tindora, grate the carrot, and chop the green capsicum.
- In a large mixing bowl, combine the tindora, red chili powder, fenugreek seeds, mustard seeds, asafoetida, turmeric powder, and salt.
- Heat the oil in a small pan and lightly temper the mustard seeds and fenugreek seeds until they start to pop. Add this tempered oil to the ingredients in the bowl.
- Add the grated carrot, chopped capsicum, and freshly squeezed lemon juice to the mixture. Stir well to combine all the ingredients evenly.
- Allow the sambharo to rest for a few minutes to let the flavors meld.
- Store the Tindora Sambharo in the refrigerator and serve whenever needed. This pickle is best enjoyed with Panchmel Daal, Bhindi Masala, and Phulkas for a satisfying Gujarati meal.
