Stir-Fried Bean Sprout Omelet (Telur Dadar Cah Taoge)

Ingredients:

  • 100 grams of bean sprouts
  • 2 large eggs
  • 1 stalk of scallion
  • 1/2 tomato
  • 1 teaspoon of bouillon powder
  • A pinch of black pepper
  • Cooking oil, as needed

For the Spice Paste:

  • 2 cloves garlic
  • 4 cloves shallots
  • 3 small red chilies

Instructions:

  1. Prepare the Spice Paste: Start by peeling and chopping the garlic and shallots. Remove the stems from the red chilies and slice them. Blend these ingredients together to create a smooth spice paste.

  2. Prepare the Eggs: In a bowl, whisk the eggs thoroughly. Heat a pan over medium heat and add a little oil. Pour in the beaten eggs to make a thin omelet. Once cooked, let it cool slightly, then cut it into thin strips resembling noodles.

  3. Cook the Aromatics: In the same pan, add a bit more oil if needed and sauté the spice paste until it becomes fragrant and golden.

  4. Add Vegetables: Chop the scallion into thin slices and dice the tomato. Add the scallion and tomato to the pan with the spice paste, and stir for a minute.

  5. Stir-Fry the Bean Sprouts: Add the bean sprouts to the pan, followed by the bouillon powder and black pepper. Stir well to combine and cook until the bean sprouts are just tender but still crisp.

  6. Combine and Finish: Gently fold in the sliced omelet and cook briefly, just until everything is heated through and the bean sprouts have wilted slightly.

  7. Serve: Transfer the stir-fried bean sprout omelet to a serving plate and enjoy immediately. This dish pairs wonderfully with steamed rice or as a side to your favorite main course.
