Ingredients

Tomato sauce (passata di pomodoro) 300g
Fresh mozzarella (fiordilatte) 180g

Fresh basil to taste

Instructions

  1. Prepare the Dough:
    In a large bowl, sift together the flour and baking soda. Add the extra virgin olive oil, and stir well to combine.
    In a separate small bowl, dissolve the salt in a small amount of water from the total amount. Pour this mixture into the flour-baking soda mix. Gradually add the remaining water and begin mixing with your hands. Continue kneading the dough until it has absorbed all the water and becomes smooth.

  2. Knead the Dough:
    Transfer the dough onto a lightly floured surface and knead it for about 10-12 minutes until it is soft and elastic. Cover it with a clean kitchen towel and let it rest at room temperature for an hour.

  3. Shape the Dough:
    After the resting period, take the dough and gently flatten it with your hands, forming a disk about 26 cm (10 inches) in diameter. This will be your pizza base.

  4. Prepare the Tomato Sauce:
    While the dough is resting, mix the tomato passata with a pinch of salt, a drizzle of olive oil, and the dried oregano in a small bowl. Stir until well combined.

  5. Preheat the Oven:
    Preheat your oven to 190°C (375°F) with the setting on static (non-fan) mode.

  6. Assemble the Pizza:
    Grease a baking sheet (or pizza stone) with olive oil. Place the pizza dough onto the greased sheet, and spread the tomato sauce evenly over the surface.

  7. Bake the Pizza:
    Bake the pizza dough in the preheated oven for about 10 minutes, or until the edges begin to slightly brown.

  8. Add Cheese:
    While the base is baking, slice the fresh mozzarella into thin pieces. Remove the partially baked crust from the oven and arrange the mozzarella slices over the top. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese has melted and the crust is golden and crispy.

  9. Finish and Serve:
    Once the pizza is ready, remove it from the oven and garnish with fresh basil leaves. Drizzle with a little extra virgin olive oil for added flavor. Serve immediately while it’s hot and fresh!
