The Quick and Simple Egg Curry is a flavorful and spicy egg dish made in less than 30 minutes. This delicious curry features hard-boiled eggs cooked in a rich onion, garlic, ginger, and tomato-based gravy, perfect for a quick weeknight dinner or a Sunday brunch.


Ingredients:

For the curry:

  • 4 Whole Eggs (hard-boiled)
  • 6 Tomatoes (cooked and pureed)
  • 1 tsp Turmeric Powder (Haldi)
  • 1 tsp Garam Masala Powder
  • 1 tsp Coriander Powder (Dhania)
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Sugar
  • Salt, to taste
  • Few Coriander Leaves (Dhania), finely chopped
  • Oil, for cooking

For the paste:

  • 1 Onion, roughly chopped
  • 1-inch Ginger, roughly chopped
  • 3 Garlic Cloves
  • 2 Green Chillies

Preparation Time: 25 minutes

Cooking Time: 30 minutes

Total Time: 55 minutes


Instructions:

  1. Boil the Eggs:
    Start by boiling the eggs. Place the eggs in a saucepan and cover them with water. Bring to a boil and cook for about 15 minutes, or until you notice a crack on the shell. Once done, remove the eggs, let them cool, and peel off the shells. Set the eggs aside.

  2. Prepare the Curry Base:
    Heat 2 tablespoons of oil in a wok or deep pan. Add the chopped onion, garlic, and ginger, and sauté for a few minutes until the raw smell disappears and the onions turn golden brown.

  3. Add Spices:
    Once the onions are roasted, add the turmeric powder, garam masala, coriander powder, red chilli powder, and sugar. Stir well to mix the spices into the onion mixture and cook for 3-4 minutes, allowing the flavors to meld together.

  4. Add Tomato Puree and Eggs:
    Next, add the cooked and pureed tomatoes, salt to taste, and the boiled eggs to the pan. Simmer the curry, covered, for 10-15 minutes, ensuring the eggs are well coated in the spicy gravy.

  5. Adjust Consistency and Seasoning:
    Check the curry for salt and spice levels. Adjust as needed, and add a bit of water if you prefer a thinner consistency.

  6. Finish the Curry:
    Stir in the finely chopped coriander leaves for a fresh flavor boost.
