Ingredients:

  • 1 package of firm tofu, cut into cubes
  • 1 handful of bean sprouts
  • 7 red chilies
  • 3 cloves of garlic
  • 2 shallots
  • 1 large onion
  • 3 tomatoes or 1 large tomato, sliced
  • Sugar, to taste
  • Seasoning powder (or salt), to taste
  • Ground black pepper, to taste
  • Soy sauce (Bangau brand, if available), to taste
  • Cooking oil

Instructions:

  1. Prepare the Tofu: Cut the tofu into 1-inch cubes. For an extra step, you can marinate the tofu in a mixture of finely crushed garlic and a bit of water. This step is optional, depending on your preference.

  2. Slice the Vegetables: Thinly slice the shallots, garlic, and onion. Slice the red chilies diagonally, and cut the tomatoes into wedges.

  3. Heat the Oil: In a skillet or wok, heat a small amount of cooking oil over medium heat. Be careful not to overheat the oil.

  4. Sautรฉ the Aromatics: Once the oil is warm, add the sliced shallots, garlic, onion, and red chilies to the pan. Stir-fry until the vegetables become fragrant and slightly caramelized, which should take a few minutes.

  5. Season the Mixture: Add 1 tablespoon of sugar and seasoning powder (or salt) to the pan. Stir to combine and continue to cook until the onions are translucent and aromatic.

  6. Add the Tofu: Gently place the tofu cubes into the pan. Pour in a small amount of water and stir-fry everything together. Allow the tofu to cook and absorb the flavors for a few minutes.

  7. Flavor the Dish: Season with ground black pepper and adjust the taste with soy sauce. Stir to ensure the tofu is well-coated with the seasoning.

  8. Add Bean Sprouts: Toss in the bean sprouts and a small amount of soy sauce. Stir-fry for a couple more minutes until the bean sprouts are tender but still crisp.
