Soya Keema Masala

Ingredients:
- 1/2 cup soya chunks
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 green chillies, finely chopped
- 1/4 cup green peas
- 3 potatoes, peeled and cooked
- 1 teaspoon cumin seeds
- 1 tablespoon oil
- 1-1/2 teaspoons ginger garlic paste
- 1 tablespoon coriander powder
- 1 tablespoon red chili powder (or to taste)
- 1/4 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- Salt, to taste

Instructions:
- Begin by boiling 2 cups of water in a pot. Add 1 tsp salt and the soya chunks to the water. Let them soak for 12–15 minutes. Drain the water and set the soya aside.
- If using green peas, place them in hot water for a few minutes, then drain and set aside.
- Peel and cook the potatoes in a pressure cooker, then chop them into small pieces.
- Heat oil in a pan and add the cumin seeds. Sauté for 15 seconds.
- Add the finely chopped onions and green chillies to the pan. Cook until the onions soften.
- Once the onions are soft, add the ginger garlic paste and cook for 2 minutes.
- Add the tomatoes and cook until they become soft and tender.
- Sprinkle in the cumin powder, turmeric powder, red chili powder, and salt. Mix well and let it cook for 15 seconds.
- Now, add the soya chunks, cooked potatoes, and green peas to the pan. Stir everything together and cook for an additional 10 minutes.
- Once done, turn off the heat and garnish with fresh coriander leaves.
