Pumpkin Seed Quinoa Pilaf Recipe

Ingredients:

  • 1 1/2 cups water
  • 3/4 cup quinoa
  • 2 tablespoons olive oil
  • 1 cup diced jicama
  • 1 cup diced red onion
  • 1 cup frozen whole kernel corn
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 2 cups chopped tomato
  • 1 cup chopped green onion
  • 1/2 cup fresh cilantro
  • 1/3 cup fresh lime juice
  • 2 teaspoons salt
  • 3 small jalapeños for garnish

Instructions:

  1. Prepare Quinoa: In a medium saucepan, combine water and quinoa. Bring to a boil over medium-high heat.

  2. Cook Quinoa: Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 20 minutes or until all the liquid is absorbed.

  3. Fluff Quinoa: Remove the saucepan from the heat and fluff the quinoa with a fork. Set it aside for later use.

  4. Sauté Vegetables: Heat olive oil in a large nonstick skillet over medium heat. Add diced jicama, red onion, frozen corn, red bell pepper, and green bell pepper. Sauté the vegetables for about 5 minutes or until they become tender.

  5. Combine Ingredients: Add the cooked quinoa, chopped tomato, green onion, fresh cilantro, lime juice, and salt to the skillet with the sautéed vegetables. Stir well to combine all the ingredients.

  6. Heat Through: Sauté the mixture for an additional minute or until thoroughly heated, ensuring all flavors meld together.
