  • 2 tablespoons Mustard Oil
  • Salt, to taste
  • 1 teaspoon Cumin Powder (Jeera)
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Turmeric Powder (Haldi)

Instructions:

Step 1: Preparing the Radish Greens

  1. Remove the leaves from the radishes and rinse the greens thoroughly in a bowl of water to remove dirt and mud. Repeat the process until clean.
  2. Drain the water and finely chop the greens.

Step 2: Cooking the Radish Greens

  1. Heat 1 teaspoon of mustard oil in a heavy-bottomed pan.
  2. Add the chopped radish greens and a pinch of salt. Stir-fry over low to medium heat until the greens begin to wilt.
  3. Cover the pan and cook for 8–10 minutes until the greens are soft.
  4. Uncover the pan immediately to retain the vibrant green color. Set the cooked greens aside.

Note: Radish greens take longer to cook than other leafy greens.

Step 3: Roasting the Potatoes

  1. Heat 2 tablespoons of mustard oil in the same pan.
  2. Add cumin seeds and broken dry red chilies. Sauté until the chilies are lightly roasted.
  3. Add the chopped garlic and stir-fry until aromatic.
  4. Add the diced potatoes and roast on medium-high heat until they are golden and slightly crisp.

Step 4: Adding Spices and Combining

  1. Sprinkle salt, red chili powder, turmeric powder, and cumin powder over the roasted potatoes. Toss well to coat evenly.
  2. Add the cooked radish greens to the spiced potatoes. Stir thoroughly to combine.
  3. Taste and adjust salt and spices as needed.
