Directions:

  1. Preheat your oven to 350°F (175°C).

  3. Cream the unsalted butter in a large bowl until smooth.

  4. Gradually add the sugar, beating until fluffy, about 3 minutes. Then, add the eggs one at a time, beating well after each addition.

  5. In a separate bowl, combine the self-rising flour and all-purpose flour with the baking powder.

  6. Slowly add the flour mixture to the batter, alternating with the milk and vanilla extract, and beating well after each addition.

  7. Divide the batter evenly into three small bowls.

  8. Add 2-3 drops of green food coloring to one bowl, yellow to another, and red to the third, adjusting as desired to achieve vibrant colors.

  9. Pour each colored batter into its own prepared pan.

  10. Bake for 20-25 minutes, or until the cakes test done with a toothpick inserted into the center.

  11. Allow the cakes to cool in the pans for 10 minutes before removing them and cooling completely on wire racks.

  12. For the filling, spread a thin layer of jam on the top of the first and second layers, followed by a thin layer of frosting.

  13. Stack the layers on top of each other.

  14. For the frosting: In a medium bowl, beat together the cream cheese and unsalted butter until smooth, about 3 minutes.

  15. Add the vanilla extract and gradually add the confectioners’ sugar, beating well until the frosting is mixed and of spreading consistency.

  16. Frost the top and sides of the cake with the cream cheese frosting, creating a beautifully finished look.
