Instructions
Step 1: Prepare the Yogurt Cream
To begin preparing your rainbow cake, first create the creamy yogurt filling. Start by soaking the gelatin sheets in cold water for at least 10 minutes. While waiting for the gelatin to soften, pour 400 ml of fresh liquid cream into a small bowl. Add the seeds from the vanilla pod and beat the cream with an electric mixer until it forms soft peaks.
In a separate bowl, gently fold the Greek yogurt into the whipped cream. Once combined, add half of the sugar and continue mixing until the mixture becomes smooth, fluffy, and slightly firm. Set the yogurt cream aside to firm up while you prepare the cake layers.
Step 2: Prepare the Cake Batter
Next, it’s time to make the cake batter. In a separate large bowl, whisk together the eggs, remaining sugar, honey, and vanilla extract. Once the mixture is well combined, add the baking powder and sift in the flour. Mix gently until you get a smooth batter.
