- 500 grams Gunde (bird lime)
- 1 teaspoon Methi Seeds (Fenugreek Seeds)
- Oil, as required
- Water, as required
- 1/2 teaspoon Cumin Seeds (Jeera)
- 1/2 teaspoon Asafoetida (Hing)
- 1 teaspoon Fennel Seeds (Saunf)
- 1/2 teaspoon Mustard Seeds (Rai/Kadugu)
- 1 teaspoon Turmeric Powder (Haldi)
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Amchur (Dry Mango Powder)
- Few Coriander (Dhania) Leaves, finely chopped

Begin by boiling the gunde (bird lime) in a saucepan with enough water. Once boiled, drain the water, remove the seeds, and allow the gunde to cool down for about an hour.

Heat oil in a heavy-bottomed pan. Add cumin seeds, mustard seeds, fennel seeds, fenugreek seeds, and asafoetida. Let the spices cook for about a minute to release their flavors.

Add the boiled gunde to the pan and mix them well with the spices.

Sprinkle turmeric powder, red chilli powder, amchur powder, and salt. Stir everything together and cook for 3 to 4 minutes.

Turn off the stove and garnish the dish with freshly chopped coriander leaves.
