For the Gatte (Gram Flour Dumplings):

Curd (Dahi/Yogurt) 2 tbsp

For the Kadhi (Yogurt Curry):

Garlic 4 cloves
Onion, finely chopped 1 medium
Asafoetida (hing) 1/4 tsp
Turmeric powder (Haldi) 1 tsp
Red Chilli powder 1/4 tsp
Bay leaf (tej patta) 1, torn
Cloves (Laung) 3
Cinnamon Stick (Dalchini) 1-inch piece
Salt To taste
Coriander (Dhania) Leaves 4 sprigs
Mustard seeds (Rai) 1/2 tsp
Ghee 1 tbsp

Instructions:

  1. Prepare the Gatte (Gram Flour Dumplings):

    • In a large mixing bowl, combine the gram flour (besan), ajwain (carom seeds), red chilli powder, curd (yogurt), oil, and salt. Gradually add water, a little at a time, and knead until a smooth, firm dough is formed. This process should take about 5 minutes of kneading to achieve a soft, melt-in-the-mouth consistency. If the dough feels too sticky, sprinkle a little more gram flour and knead again until smooth.
    • Roll the dough into a cylindrical log, about 1 inch in diameter, and cut it into 1-inch pieces. Set the gatte aside.
  2. Cook the Gatte:

    • Bring a large saucepan of water to a boil. Once the water is at a brisk boil, add the prepared gatte pieces and cook. The gatte will rise to the top as they cook, signaling that they are almost ready. Let them boil for an additional 3-4 minutes.
    • Once cooked, remove the gatte from the water, drain, and set aside.
  3. Make the Kadhi (Yogurt Curry):

    • In a mixing bowl, whisk together the curd (yogurt) and gram flour (besan) until smooth. Add asafoetida (hing), turmeric powder, red chilli powder, and salt, followed by 2-1/2 cups of water. Whisk everything thoroughly to form a smooth curry base.
  4. Prepare the Tempering (Tadka):

    • Heat 1 tbsp ghee in a saucepan over medium heat. Add the mustard seeds and allow them to crackle. Add the finely chopped onion and garlic and sauté until the onions soften and become golden.
    • Add the bay leaf, cloves, and cinnamon stick. Sauté for a few seconds until the spices release their aromatic fragrance.
  5. Simmer the Kadhi:

    • Carefully pour the kadhi mixture into the tempering, stirring constantly to avoid lumps. Bring the kadhi to a brisk boil, and let it simmer gently for about 10-15 minutes, stirring occasionally. If the kadhi thickens too much, you can add a little water to adjust the consistency to your liking.
  6. Combine Gatte and Kadhi:

    • Once the kadhi has thickened and the flavors have melded together, add the boiled gatte to the curry. Stir gently to coat the gatte with the flavorful kadhi.
    • Let the gatte simmer in the kadhi for 2-3 more minutes, allowing the flavors to marry. Adjust salt and spices to taste.
  7. Garnish and Serve:

    • Stir in freshly chopped coriander leaves for a burst of color and freshness.
