Instructions

  1. Prepare the Kadhi Mixture:

    • In a large bowl, whisk together 1 cup of curd (yogurt), 2 tablespoons of gram flour (besan), 1/2 teaspoon of turmeric powder, and 1 teaspoon of red chilli powder. Ensure the mixture is smooth and free of lumps.
    • Gradually add 1 cup of water to the bowl and mix well, adjusting the consistency to your preference (it should be smooth and slightly runny).
  2. Cook the Kadhi Base:

    • Heat 1 tablespoon of ghee in a heavy-bottomed pan over medium heat. Once hot, add 1 teaspoon of mustard seeds and 1/2 teaspoon of fenugreek seeds. Allow the seeds to splutter and release their aroma.
    • Add a pinch of asafoetida (hing) to the pan, followed by the thinly sliced onion and sauté for 4-5 minutes, or until the onions turn soft and translucent.
  3. Simmer the Kadhi:

    • Once the onions are soft, pour in the kadhi mixture you prepared earlier. Add more water if needed to reach a thin consistency.
    • Bring the kadhi to a rolling boil over high heat, stirring occasionally to prevent the mixture from sticking to the bottom of the pan.
    • Once the kadhi reaches a boil, reduce the heat and let it simmer for 10 minutes. The longer you simmer, the richer the flavors of the onions and besan will infuse into the kadhi.
  4. Prepare the Second Tadka:

    • While the kadhi is simmering, heat 1 tablespoon of ghee in a small tadka (tempering) pan over medium heat.
    • Add 1 teaspoon of cumin seeds and 1 teaspoon of coriander seeds. Let them splutter for a few seconds.
    • Drop in the dry red chilli and curry leaves, frying them for about 30 seconds until fragrant. Switch off the heat.
  5. Final Touches:

    • Carefully add the tadka mixture (from step 4) into the simmering kadhi. Mix gently to combine all the flavors.
    • Turn off the heat and let the kadhi rest for a few minutes, allowing the spices to meld together.
  6. Serve:

    • Serve the Rajasthani Pyaaz Ki Kadhi hot with Bajri Ki Roti (millet flatbread) or Masala Khichia (spiced crackers) on the side.
    • This kadhi is also perfect when paired with Steamed Rice or Jeera Rice for a fulfilling meal.
