Ingredients:

  • 1 1/2 cups heavy cream
  • 1/2 cup fresh raspberries
  • 3 egg whites
  • 1 cup sugar (divided)
  • 2/3 cup milk
  • 1 tablespoon lemon juice

Instructions:

Step Description
1 In a bowl, mix raspberries with 1/3 cup of sugar and lemon juice.
2 Refrigerate the raspberry mixture for 2 hours, stirring every 30 minutes.
3 In another bowl, beat egg whites until light and frothy.
4 Gradually mix in the remaining sugar into the beaten egg whites.
5 Add the cream and milk to the egg white mixture, combining well.
6 Mash the raspberry mixture and strain the liquid into the cream/egg mixture.
7 Optionally, add the raspberry pulp and seeds to the mixture for added texture and taste (recommended).
8 Refrigerate the mixture overnight or add it immediately to an ice cream maker.
9 Follow the ice cream maker’s instructions for churning and freezing.
