Instructions:

  1. Prepare the Shells:
    Start by making the dough for the biscuit shells. In a large bowl (or a stand mixer if preferred), add the room-temperature eggs and the granulated sugar, adding the sugar gradually. Beat the mixture with an electric mixer on medium speed until you achieve a light, fluffy, and pale consistency, which should take about 10 minutes.

  2. Add the Dry Ingredients:
    Once the egg and sugar mixture is fluffy, sift the all-purpose flour and baking powder directly into the bowl. Gently fold them in until well combined, being careful not to deflate the batter too much.

  3. Shape and Bake the Shells:
    Line a baking sheet with parchment paper. Using a spoon or piping bag, form small circles of the batter, about 3 cm in diameter, leaving space between them. You should aim for 20 individual discs of dough. Bake in a preheated oven at 180°C (350°F) for about 10-12 minutes, or until the cookies are golden and firm to the touch.

    To finish off, melt the dark chocolate. Place it in a heatproof bowl over a pot of simmering water (double-boiler method) until it is fully melted. Once smooth, pour the melted chocolate into a parchment paper cone (or a piping bag) to drizzle over the top of each biscuit. Create delicate parallel lines on the top shell for a beautiful finish.

  9. Chill and Serve:
    Allow the decorated biscuits to set for a few minutes at room temperature. For an extra touch, refrigerate them for about 15 minutes to ensure the chocolate sets well. Serve and enjoy the delightful raspberry and cream-filled “kisses.”
