Raspberry, Yogurt, and Nutella® Parfait (Bicchierino Lamponi, Yogurt e Nutella®)

Prepare the Raspberries:
Start by preparing the raspberries. In a small saucepan, combine the raspberries and brown sugar, then cook over medium heat for about 2 minutes. The sugar should dissolve while keeping the raspberries mostly intact. Remove from heat and transfer the mixture to a bowl. Allow it to cool completely. -
Make the Yogurt Cream:
In a separate bowl, place the Greek yogurt and add the heavy cream. Split the vanilla bean lengthwise, scrape out the seeds, and add them to the yogurt mixture. Stir well until smooth and combined. Cover the bowl with plastic wrap and refrigerate until you’re ready to assemble the parfait. -
Prepare the Pandoro:
Cut the pandoro into two thick slices, about 1 cm each. Trim the edges of the slices so that only the golden crust remains on the longer sides. Then, from each slice, cut out three rectangular pieces, each measuring approximately 3×5 cm. -
Toast the Pandoro:
In a non-stick pan, melt a little butter over medium heat. Place the pandoro rectangles into the pan and cook until they are golden brown on both sides. Once done, transfer them to a small bowl and set aside. -
Assemble the Parfaits:
For easier assembly, transfer the chilled yogurt mixture into a piping bag. Begin by placing a layer of the yogurt cream into each of your parfait glasses. Follow this with a thin layer of Nutella®, also piped for precision. -
Layer the Pandoro:
Add a piece of toasted pandoro on top of the yogurt-Nutella layer, pressing it slightly into the cream. Continue layering with another spoonful of yogurt cream and a dollop of Nutella®. -
Finish with Raspberries and Sugar:
Top off the parfait with some of the raspberry mixture from earlier, placing it gently on one side of the parfait. Dust lightly with powdered sugar for an elegant finish. -
Serve:
Serve the parfaits immediately, or refrigerate until ready to enjoy. These delightful layers of creamy yogurt, warm Nutella®, and tangy raspberries will surely make for a delicious treat!
