Raw Mango Dhokla with Sweet Mango Chutney

This Raw Mango Dhokla is a delicious Gujarati snack that combines the tang of raw mango with the heat of green chilies and ginger. Once the dhokla is steamed to perfection, it’s topped with a sweet and spicy mango chutney, giving it a refreshing and flavorful punch.

Ingredients:

For the Chutney:

  • 1 Raw Mango, peeled and chopped
  • 1/2 teaspoon Mustard Seeds (Rai/ Kadugu)
  • 2 Dry Red Chillies
  • 1 teaspoon Panch Phoran Masala
  • 1/2 teaspoon Cumin Seeds (Jeera)
  • 1/2 teaspoon Fennel Seeds (Saunf)
  • 1/4 teaspoon Kalonji (Onion Nigella Seeds)
  • 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
  • 1/2 teaspoon Mustard Seeds (Rai/ Kadugu)
  • 2 tablespoons Oil
  • 1/4 cup Jaggery (adjust to taste)
  • 1 teaspoon Salt
  • 1 cup Gram Flour (Besan)
  • 1/2 teaspoon Turmeric Powder (Haldi)
  • 1/2 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 teaspoon Enos Fruit Salt
  • 1/2 cup Grated Raw Mango
  • 1 tablespoon Oil

Preparation Time: 20 minutes

Cooking Time: 40 minutes


Instructions:

Making the Chutney:

  1. In a pressure cooker, add mustard seeds and dried red chillies.
  2. Add the chopped mango pieces, jaggery, panch phoran masala, salt, and turmeric powder.
  3. Pour in a little water, close the cooker, and cook for 3โ€“4 whistles.
  4. Once done, open the cooker, adjust salt and spices as needed, and set the chutney aside.

Making the Dhokla:

  1. In a bowl, combine gram flour (besan), salt, sugar, turmeric powder, and enough water to form a thick batter, similar to that of khaman dhokla.
  2. Stir in the grated raw mangoes, oil, and eno’s fruit salt. The batter should have the consistency of idli batter.
  3. Grease a dhokla plate with oil and preheat the dhokla steamer with water.
  4. Spoon the batter into the dhokla plates, and place them in the steamer. Steam for 10-12 minutes over high heat until done. A knife inserted should come out clean.
  5. Once steamed, allow the dhokla to cool.
  6. Loosen the edges of the dhokla and invert it onto a plate. Cut it into diamond-shaped pieces.
  7. Arrange the dhokla on a serving platter and spoon the sweet and spicy raw mango chutney over the top. Serve warm.

This Raw Mango Dhokla makes a perfect party starter or a refreshing evening snack, especially during the hot summer months!
