Raw Mango Dhokla with Sweet Mango Chutney

Ingredients:
For the Chutney:
- 1 Raw Mango, peeled and chopped
- 1/2 teaspoon Mustard Seeds (Rai/ Kadugu)
- 2 Dry Red Chillies
- 1 teaspoon Panch Phoran Masala
- 1/2 teaspoon Cumin Seeds (Jeera)
- 1/2 teaspoon Fennel Seeds (Saunf)
- 1/4 teaspoon Kalonji (Onion Nigella Seeds)
- 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
- 1/2 teaspoon Mustard Seeds (Rai/ Kadugu)
- 2 tablespoons Oil
- 1/4 cup Jaggery (adjust to taste)
- 1 teaspoon Salt
- 1 cup Gram Flour (Besan)
- 1/2 teaspoon Turmeric Powder (Haldi)
- 1/2 teaspoon Salt
- 1 teaspoon Sugar
- 1 teaspoon Enos Fruit Salt
- 1/2 cup Grated Raw Mango
- 1 tablespoon Oil

Instructions:
Making the Chutney:
- In a pressure cooker, add mustard seeds and dried red chillies.
- Add the chopped mango pieces, jaggery, panch phoran masala, salt, and turmeric powder.
- Pour in a little water, close the cooker, and cook for 3โ4 whistles.
- Once done, open the cooker, adjust salt and spices as needed, and set the chutney aside.
Making the Dhokla:
- In a bowl, combine gram flour (besan), salt, sugar, turmeric powder, and enough water to form a thick batter, similar to that of khaman dhokla.
- Stir in the grated raw mangoes, oil, and eno’s fruit salt. The batter should have the consistency of idli batter.
- Grease a dhokla plate with oil and preheat the dhokla steamer with water.
- Spoon the batter into the dhokla plates, and place them in the steamer. Steam for 10-12 minutes over high heat until done. A knife inserted should come out clean.
- Once steamed, allow the dhokla to cool.
- Loosen the edges of the dhokla and invert it onto a plate. Cut it into diamond-shaped pieces.
- Arrange the dhokla on a serving platter and spoon the sweet and spicy raw mango chutney over the top. Serve warm.
