Struffoli with Red Berries

Instructions

To prepare the Struffoli with Red Berries, start by making the dough. Crack the eggs into a large mixing bowl, then add the sugar. Pour in a drizzle of extra virgin olive oil, followed by the zest of about one-quarter of the orange and a touch of lime zest. Squeeze the juice from the orange and add it to the mixture.

Next, gradually pour in the all-purpose flour, mixing it in with your hands until the dough starts coming together. Once the dough becomes firm, transfer it to a well-floured surface. Wrap the dough in plastic wrap and let it rest.

Once the dough has rested, roll it into small logs about 1 cm thick. Using a knife, cut the logs into small pieces around 0.5 cm wide. Then, with your palm, gently roll each piece to form the classic struffolo shape.

Now it’s time to fry the struffoli. Heat sunflower oil in a deep pan, ensuring the temperature reaches about 170Β°C (340Β°F). Carefully lower the small pieces of dough into the hot oil using a slotted spoon. Be sure not to overcrowd the pan, as this can lower the oil temperature. Fry the struffoli in batches, turning them occasionally with the slotted spoon. They should take about 5 minutes to become golden and crispy. Once done, remove the struffoli from the oil and set them aside to drain on paper towels.

While the struffoli cools slightly, prepare the glaze. Use a hand blender to puree the fresh raspberries until smooth. In a separate pan, heat the honey over medium heat until it becomes slightly warm. Add the fried struffoli to the pan, stirring gently to coat them in the honey.

Once the honey has thoroughly glazed the struffoli, add the raspberry puree and stir carefully to evenly coat the pieces. Allow the mixture to cook for a few more minutes so the glaze thickens.

Transfer the finished struffoli to a serving plate. Garnish with freeze-dried raspberries, fresh raspberries, and crumbled meringue. You can also add a touch of dark chocolate for extra indulgence.
