Red Berry Yogurt Parfait with Granola and Nutella®

This delightful dessert combines the creaminess of Greek yogurt, the sweetness of fresh berries, the crunch of homemade granola, and the irresistible Nutella® for a treat that’s as delicious as it is beautiful. Perfect for any occasion, this Red Berry Yogurt Parfait is a feast for both the eyes and the palate!

Instructions

Step 1: Prepare the Granola

Start by making the granola. First, rinse and soak the raisins in hot water for about 10 minutes, then drain and squeeze out the excess water. Chop the pecan nuts coarsely. In a pan, combine the oats, soaked raisins, and muscovado sugar. Mix them well, then toast the mixture in a pan over medium heat for about 3 minutes until lightly golden and fragrant. Set it aside to cool.

Step 2: Make the Yogurt Cream

To prepare the yogurt cream, blend the frozen banana pieces, Greek yogurt, and oats in a blender. Add the frozen blackberries, raspberries, and blueberries. Blend everything until smooth and creamy. This creates a deliciously rich yogurt base.

Step 3: Whip the Cream

In a separate bowl, whip the fresh cream with an electric mixer until stiff peaks form. Gently fold the whipped cream into the yogurt mixture using a spatula. This step ensures the cream is airy and light. Let the yogurt mixture rest in the fridge for at least an hour to set.

Step 4: Assemble the Parfait

While the yogurt cream is chilling, fill a piping bag fitted with a star-shaped nozzle (around 6mm in diameter) with Nutella®. Now, it’s time to assemble the parfaits. Start by layering a spoonful of granola at the bottom of each glass. Then, pipe in a layer of the creamy yogurt mixture. Add another layer of yogurt cream, followed by fresh berries like raspberries, blackberries, and blueberries. Finally, pipe a decorative swirl of Nutella® on the side of each glass.

Step 5: Garnish and Serve

Finish off each parfait with a raspberry, a few blueberries, a sprinkle of granola, and a few fresh mint leaves for a pop of color. The parfaits are now ready to enjoy!


Tips:

  • You can make the granola and yogurt mixture ahead of time for quicker assembly.
  • If you prefer a dairy-free option, substitute the Greek yogurt with coconut yogurt and the fresh cream with coconut cream.
  • Feel free to adjust the berry mix according to what’s available or in season for a fresh twist.
