Red Wine and Apple Guttiau Bread Sformatini

Ingredients:

Golden Delicious Apples 320g
Guttiau Bread 120g
Gorgonzola Cheese 170g
Whole Milk 90g
Red Wine to taste
Butter 10g
Fresh Rosemary to taste
Fine Salt to taste
Black Pepper to taste

Instructions:

  1. Prepare the Apples:
    Begin by washing the Golden Delicious apples thoroughly. Slice them into wedges, leaving the skin intact. Remove the stems and cores, and cut each wedge in half for smaller pieces.

  2. Cook the Apples:
    In a pan, melt the butter over medium heat. Once melted, add the apple wedges, season with salt and black pepper, and sauté over high heat for about 10 minutes, stirring occasionally. The apples should become golden brown and tender. Set aside.

  3. Make the Gorgonzola Sauce:
    In a tall, narrow glass or container, place the Gorgonzola cheese and add the whole milk. Using an immersion blender or a whisk, blend until the mixture becomes a smooth, creamy sauce.

  4. Assemble the Sformatini:
    Line a baking tray with parchment paper and set four round ring molds (each 8 cm in diameter) on top. Tear the guttiau bread into pieces by hand and gently soak each piece in red wine until soft.
    Begin layering the sformatini: Place a layer of the soaked guttiau bread at the bottom of each ring mold, followed by a few pieces of sautéed apples and a drizzle of the Gorgonzola sauce.
    Repeat this layering process until you’ve created three layers in each mold, finishing with a layer of apples and a final drizzle of Gorgonzola sauce.

  5. Bake the Sformatini:
    Preheat your oven to 180°C (350°F) in static mode. Place the prepared sformatini in the oven and bake for approximately 10 minutes, or until the edges become slightly golden and crispy.

  6. Serve:
    Once baked, carefully remove the sformatini from the oven. Gently lift off the ring molds and transfer the sformatini to serving plates. For an extra touch, drizzle more Gorgonzola sauce over the top and garnish with fresh rosemary sprigs.
