  1. Prepare Mushrooms:

    • Cut stems from fresh mushrooms, and set stems aside.
    • Cut mushroom caps in half, and set aside.
  2. Prepare Broth:

    • In a small non-aluminum saucepan, combine mushroom stems, chicken broth, and dry red wine.
    • Bring to a boil, then reduce heat and simmer uncovered for 15 minutes or until reduced to 1 cup.
    • Strain the mixture, reserve the cooking liquid, and set it aside. Discard the mushroom stems.
  3. Prepare Chicken:

    • Sprinkle chicken thighs and drumsticks with salt and pepper, then set them aside.
  4. Brown Chicken:

    • Coat a large frypan with cooking spray and place it over medium-high heat until hot.
    • Add the chicken pieces and cook until they are nicely browned.
    • Remove the chicken from the frypan and set it aside. Wipe the drippings from the pan with a paper towel.
  5. Sauté Vegetables:

    • Coat the same skillet with cooking spray and place it over medium-low heat until hot.
    • Add onions and garlic to the skillet and cook until the onions are browned.

    • Discard the herbs from the cooking liquid.
    • Increase the heat to high and cook the cooking liquid for about 10 minutes or until it is reduced to about 1/2 cup.
    • Serve the braised chicken, ham, and vegetables with the reduced sauce poured over the top.
