  1. Begin by preparing your poaching liquid: in a medium-sized saucepan, combine the red wine, sugar, and water. Place the saucepan on the stove over medium heat, stirring occasionally until the sugar has fully dissolved. Once the mixture begins to warm up, gradually bring it to a simmer.

  2. While waiting for the liquid to heat, take your pears and carefully peel them, leaving the stems intact. Once peeled, set the pears aside.

  3. Into the saucepan with the simmering wine mixture, add the cinnamon stick, star anise, cloves, and cardamom pods. Stir gently to combine the spices with the liquid, allowing the fragrance of the spices to infuse the poaching mixture.

  4. Carefully lower the peeled pears into the simmering liquid, ensuring they are fully submerged. Allow the pears to poach for about 25-30 minutes, or until they become tender. Be sure to turn them occasionally to ensure they cook evenly.

  5. Once the pears are tender, remove them from the saucepan with a slotted spoon and set them aside on a plate. Continue to simmer the poaching liquid until it reduces and thickens slightly into a syrupy consistency.

  6. To serve, place each pear into individual bowls. Pour the reduced syrup over the pears, making sure to drizzle the spiced liquid generously over each one. The rich, aromatic syrup will elevate the flavor of the tender pears, creating a luxurious dessert.
