Melon Salad Recipe

Cantaloupe melon 900g
Lamb’s lettuce (Songino) 100g
Radishes 330g
Feta cheese 200g
Black olives 80g
Balsamic vinegar to taste
Extra virgin olive oil to taste
Fine salt to taste
Fresh mint to taste

Instructions

  1. Prepare the Melon: Start by cleaning the cantaloupe melon. Cut off both ends, then slice the melon in half. Use a spoon to remove the seeds and fibrous parts. Once the melon is cleaned, cut it into slices and remove the rind. Set the melon pieces aside.

  2. Prepare the Radishes: Remove the leaves and trim the stems from the radishes. Rinse them thoroughly under cold water. Once clean, cut them into thin slices or small pieces, depending on your preference.

  3. Cut the Feta: Next, cut the feta cheese into small cubes. Be sure to use a firm feta to avoid it crumbling too much in the salad.

  4. Prepare the Black Olives: If using whole olives, pit them, then slice or chop them. If using pre-sliced olives, simply drain any excess brine.

  5. Assemble the Salad: In a large bowl, combine the melon cubes, lamb’s lettuce (songino), radish pieces, feta cubes, and black olives.

  6. Season the Salad: Drizzle the salad with balsamic vinegar and extra virgin olive oil to taste. Season with a pinch of fine salt and stir gently to combine all the ingredients.

  7. Garnish and Serve: Once the salad is well mixed, transfer it to serving plates. Garnish with fresh mint leaves for an added touch of freshness and aroma.
