Green Chilies, finely chopped 2

Instructions:

  1. Roast the Cauliflower:
    Begin by heating a teaspoon of oil in a heavy-bottomed pan. Add the cauliflower florets and sprinkle a pinch of salt. Stir fry the florets on low to medium heat for about 10-12 minutes, or until the cauliflower is tender and cooked through. Once done, remove from heat and allow the florets to cool completely.

  2. Prepare the Yogurt Mixture:
    While the cauliflower is cooling, whisk the hung curd (Greek yogurt) in a mixing bowl. Add roasted cumin powder, finely chopped green chilies, and salt to taste. Mix well until the yogurt is smooth and creamy.

  3. Assemble the Raita:
    Once the cauliflower is completely cooled, add it to the yogurt mixture. Stir in the chopped cucumber and fresh coriander leaves. Taste the raita and adjust the seasoning if needed.

  4. Serve:
    Transfer the cauliflower and cucumber raita to a serving bowl. This refreshing raita is now ready to be served as a perfect side dish with Parathas, Rice, or Biryani. It also pairs wonderfully with grilled meats or as a light salad option on its own.
