Instructions

Close the lid and cook the mango on high heat for about 3 to 4 whistles. Once done, turn off the heat and allow the pressure to release naturally.

  2. Extract the Mango Pulp:
    Once the pressure has released, open the cooker and squeeze out the pulp from the mango. Discard the seed and keep only the pulp. You can either mash the pulp with a potato masher or puree it using a blender, depending on the texture you prefer for your Aam Panna.

  3. Roast the Fennel Seeds:
    In a separate pan, dry roast the fennel seeds over medium heat until they become crispy and release a pleasant aroma. Once roasted, transfer them to a mortar and pestle and crush them coarsely. Set the crushed fennel seeds aside.

  4. Prepare the Spice Blend:
    To the prepared mango pulp, add 1/4 teaspoon of cardamom powder, 1/4 teaspoon of black pepper powder, and the crushed fennel seeds. Stir well to ensure that the spices are well incorporated into the pulp.
