Instructions

  1. Prepare the yogurt base: Begin by whisking the curd (yogurt) in a mixing bowl. Add salt to taste and mix well. Gradually add the required amount of water to achieve a smooth, slightly runny consistency. Set this aside.

  2. Saute the spices: In a small pan, heat the oil over medium heat. Once the oil is hot, add cumin seeds and let them sizzle for a few seconds. Then, add the finely chopped green chili and sliced onions to the pan. Saute the onions until they become soft and translucent, about 4-5 minutes.

  3. Add corn and seasonings: To the pan, add the boiled sweet corn, red chili powder, and a pinch of salt. Stir well and sauté for another minute, allowing the flavors to combine. Remove the pan from the heat and let the corn mixture cool down a bit.

  4. Combine with curd: Once the corn mixture has cooled, add it to the whisked curd. Mix thoroughly to combine all the ingredients, ensuring that the corn and onions are evenly distributed throughout the raita.

  5. Garnish and serve: Garnish the Corn and Onion Raita with freshly chopped coriander leaves for an extra burst of flavor and color.
