Total Time: 15 minutes

Servings: 4

Cuisine: Indian

Course: Side Dish

Diet: Vegetarian

Instructions

  1. Prepare the Guava: Start by washing the guava thoroughly. Cut the guava into small bite-sized pieces. If the guava is too ripe, you can peel it, though leaving the skin on adds a nice texture to the raita.

  2. Mix the Raita Base: In a large bowl, take 2 cups of curd (yogurt). Add the chopped guava pieces to the yogurt and mix them together. Add salt according to your taste preferences and stir well to combine. Set aside.

  3. Prepare the Tempering: Heat oil in a small tempering pan over medium heat. Once the oil is hot, add 1 tsp of mustard seeds (rai) and let them crackle. Then, add 1 tsp of urad dal (black gram) and fry until it turns golden brown and crisp.

  4. Add Aromatics: Once the dal has turned golden, add a sprig of curry leaves and 1 dried red chili. Allow it to cook for about 10 seconds, allowing the spices to release their fragrant aroma.

  5. Combine the Tempering with the Raita: Pour the prepared tempering over the yogurt and guava mixture. Add a pinch of asafetida (hing) for a slight pungency and give everything a final stir to combine the flavors.

  6. Serve: Your Amrood Raita is now ready to be served! This refreshing side dish pairs wonderfully with a variety of Indian meals. For a traditional touch, serve it alongside Khandeshi dal, Sew Tomato vegetable, and phulka (flatbreads) for a complete meal.
