This Gulkand Kulfi is a delightful twist on the classic Indian dessert. By combining the richness of condensed milk and the refreshing flavors of Gulkand, this version adds a unique floral sweetness to the traditional kulfi. It’s made with a blend of fennel, almonds, and betel nut for a perfect balance of texture and taste, making it a refreshing treat for any occasion.

Ingredients:

  • 3 liters Milk (Use 2% fat milk)
  • 1/2 cup Sugar
  • 1 teaspoon Fennel seeds (Saunf), powdered
  • 1/4 cup Gulkand
  • 1/4 cup Whole Almonds (Badam), powdered
  • 1 teaspoon Gulkand
  • 1/2 teaspoon Betel Nut (Supari)

Preparation Time: 10 minutes

Cook Time: 45 minutes

Freezing Time: 15+ hours

Instructions:

  1. Begin by heating the milk in a heavy-bottomed saucepan over medium heat. Bring the milk to a boil.
  2. Once boiling, reduce the heat to low and allow the milk to simmer. Stir frequently to prevent burning. Continue simmering until the milk is reduced by more than half.
  3. As the milk reduces, make sure to stir continuously to avoid it sticking to the bottom and sides of the pan, which could cause burning.
  4. Once the milk is condensed, add sugar and stir until dissolved completely.
  5. Stir in the fennel seeds powder, almond powder, saffron, and Gulkand into the mixture. Mix thoroughly and turn off the heat.
  6. Allow the mixture to cool completely.
  7. Pour the cooled Gulkand Kulfi mixture into kulfi moulds, filling them about 3/4 full. Seal the moulds tightly and place them in the freezer.
  8. Freeze the kulfi for at least 15 hours or more to ensure it’s set properly.
  9. Once frozen, run the moulds under warm water briefly to help release the kulfi. Serve immediately.
