Ingredients

Kiwi 4
Cheddar Cheese 100g
Yellow Bell Pepper ½
Green Bell Pepper ½
Lemon Juice 1
Cherry Tomatoes 8
Sweetcorn 150g
Chili Pepper 1
Extra Virgin Olive Oil 3 tbsp
Salt To taste

Instructions

  1. Start by peeling the kiwis, then cut them in half before slicing them into 3mm thick pieces.
  2. Wash the bell peppers, remove the seeds and inner membranes, and slice them into julienne strips.
  3. Rinse the cherry tomatoes and cut each one into 4 wedges.
  4. Slice the chili pepper into thin rounds, having already removed the seeds.
  5. Place all of the prepared ingredients into a large salad bowl.
  6. Add the lemon juice, salt, extra virgin olive oil, and sweetcorn to the bowl.
  7. Gently toss all the ingredients together, ensuring an even distribution of flavors.
