Mustard Seeds (Rai/Kadugu) 1 teaspoon
Cumin Seeds (Jeera) 1 teaspoon
Curry Leaves 1 sprig
Asafoetida (Hing) A pinch
Oil As needed

Instructions:

  1. Whip the Yogurt: Start by whipping the curd (yogurt) in a bowl. Add the chopped coriander leaves, mint leaves, and salt to taste. Mix everything together until the ingredients are well combined and the texture is smooth.

  2. Prepare the Tempering: Heat a tempering pan with oil. Once the oil is hot, add the mustard seeds and cumin seeds. Allow them to sizzle for a few seconds, releasing their aromatic flavors.

  3. Add the Rest of the Tempering Ingredients: Add the curry leaves and a pinch of asafoetida (hing) to the hot oil. Let the spices crackle and release their fragrance. This quick tempering infuses the oil with a delightful essence that enhances the raita.

  4. Combine the Tempering with the Raita: Pour the tempering mixture over the whipped curd mixture. Stir gently to combine the flavors.
